Thiéré in Wolof (Senegal), Bassi in Bambara (Mali), or simply millet couscous in French, is a traditional West African signature dish. Made from millet, a local and ancestral cereal, Thiéré is considered a symbol of fertility and plays a central role in many cultural and family celebrations.
This local couscous is distinguished by the fineness of its grains. It is obtained by manually kneading millet flour mixed with water, forming small balls that are then steamed until they reach a light and tasty texture.
